This has become my go to cooking prep knife as I’m not a fan of 8” blades for most things. The thickness is perfect for me, not as thin as some other more delicate blades, and not so thick as to break foods instead of cut them. We’ll balanced and feels nice in hand, no hot spots.
Just like Microtech's paring knife, the 4" santoku has handle scales that are machined to very pointed edges instead of the more rounded corners that Microtech uses on their 6" and 8" kitchen knives. This makes the 4" santoku very uncomfortable in hand. Microtech really needs to redesign the handles of their smaller kitchen knives to be more similar to the larger ones. I'm not sure why they would smooth out the edges on the larger knives, but design the smaller handles with very pointed edges.
